What to Pack for Australia in Summer: A Men's Guide (December to February)
Short answer: Australian summer runs December to February with temperatures between 25°C and 40°C (77°F to 104°F) and the highest UV index of any populated continent. For two weeks, pack three linen shirts, two pairs of lightweight trousers, two pairs of tailored shorts, two swim shorts, leather sandals, clean sneakers and a hat you will actually wear. Australia is warmer and drier than most of Europe in summer, and dress codes in Sydney and Melbourne are smarter than the beach reputation suggests.

The number nobody warns you about is the UV index. Australia regularly hits UV 11 to 14 in summer, which is roughly double a Mediterranean midday. Unprotected skin burns in about eleven minutes. This changes what you pack, because a long sleeve shirt stops being a fashion choice and becomes sun protection.
Why a long sleeve linen shirt beats a t-shirt in Australia
This is counterintuitive until you have done a day in it. A loose long sleeve 100% linen shirt covers your forearms and shoulders, which are the two places that burn first, while still allowing air to move across the skin. A t-shirt leaves both exposed and traps heat across the back.
Linen also handles the humidity on the east coast better than cotton, because the fibre moves moisture away and dries faster. In Cairns or Byron in January, a cotton t-shirt is a wet t-shirt by eleven in the morning.

What is the dress code in Sydney and Melbourne?
Smarter than most visitors expect. Sydney harbourside restaurants and Melbourne dining rooms sit closer to a European city standard than to a beach town. Collared shirt and trousers is the safe evening default in both, and a linen shirt with the sleeves rolled reads correctly in almost every venue that is not black tie.
Byron Bay, Noosa and the Whitsundays run genuinely casual, and shorts at dinner are fine. The mistake is packing only for that version of Australia and then arriving in Sydney for the last three nights.
The honest problem with linen in Australia
Two things.
It creases, permanently and visibly, and a long flight to Australia is the longest crease test there is. Roll rather than fold, hang on arrival, and accept that the first day looks lived in.
Second, 100% linen offers moderate UV protection but not total. A loose weave lets some light through. If you are spending full days on water in Queensland, a purpose built UPF 50 rash shirt beats linen for that specific job. Linen is the right answer for heat and for everything on land. It is not a substitute for sunscreen.
